Shrimp in Banana Trees

Marinated, steamed shrimp with rice

Ingredients - Rice - Kao Pad Katrien

200g of Jasmine Rice (Thai cuisine)

2 cloves of garlic

30ml of olive oil

Lime zest

Salt to taste

How to Prepare - Rice

1. Place the rice in a pan, saute it with chopped garlic or paste and olive oil, and cover it with boiling water to the point that when you touch the rice with the tip of your finger, the water is at the level of the first phalanx. Cook with the pan half-closed until the water dries up. Cover the pan and let it rest for 10 minutes.

 Add the cooked rice and salt to taste.

 

Ingredients - Shrimp

400g of peeled shrimp

50g of brown sugar

1 pepper finger of moça;

10g ginger

150ml of rice vinegar

50ml of fish sauce (yam pla)

1 banana leaf.

 

Directions - Shrimp

1. Mix the sugar, pepper, ginger, vinegar and fish sauce in a blender. Place the shrimp in this sauce (marinade) for 5 minutes. Meanwhile, cut the banana leaves into 20cm x 10cm and soak them in boiling water for 2 min. Remove the shrimp from the "marinade", place them on the banana leaf, add salt to taste and roll up like a cannelloni. Secure the ends with toothpicks to seal the banana leaf.

2. Steam the banana leaves for 5min.

 

Ingredients - Asian Sauce

100g brown sugar;

150ml soy sauce;

10g ginger, cut into strips;

1 optional "dedo de moça" pepper;

50ml sake

Preparation - Asian Sauce

1. combine all ingredients in a saucepan and cook over low heat to reduce by half.
